The aim is not to overthink this. Bread is forgiving,
especially flatbread. It's also very easy. If you want
to eat the bread straight away, just leave out the
yeast. Ideally though, add yeast and give it at least an
hour.
First mix: combine yeast and water. Mix well. You're
doing this to ensure the yeast is mixed into the
water.
Add the first batch of flour and wet batter this
further protects the yeast from the salt.
Second mix: Easy. flour on top and create a little
divvet. Put the salt in the divvet. Now mix
everything together with a spoon. Don't worry about
the salt and the yeast, it'll be fine.
Ideally give it a knead about one hour before use
and shape into portions
Great, this is now ready to make a flat bread, a
pizza base or a ciabatta.
